My inner Julia has allowed me the ability to cook with whatever is handy and usually it includes some very fresh local ingredients.... this was a great, super-fast weeknight meal.... I served with asparagus & brown rice. Even your fish hater will have a hard time not smiling at this one.
WHAT YOU WILL NEED:
Salsa:
2 cups finely diced fruit strawberries and oranges
1/4 cup fresh cilantro, chopped
1/4 cup finely chopped red onion
1 fresh serrano or jalapeño chile, seeded and finely chopped
2 tablespoons lime juice
1/4 cup fresh cilantro, chopped

Fish:
4 Tilapia fillets {Any mild fish would do}
2 tbsp butter
2 tbsp olive oil
1/2 cup flour
1/2 tsp kosher salt

WHAT YOU DO:
Salsa:
1. Simply combine all ingredients in a medium size bowl and toss gently until well combined. Sprinkle with salt and pepper. Let stand to marry while you cook the fish.
Fish:
Fish:
1. Pat fish dry and season both sides lightly with salt.
2. Place the flour in a shallow bowl or pie plate and dredge fish in flour. Shake off any excess.
3. Heat oil in skillet over high heat. Add butter and heat until melted. Reduce heat to medium and add fish to pan. When bottom of fish is golden brown, gently flip fish. approximately 4-5 minutes per side.... the fish will be golden brown and flake easily {test of the corner of the piece that will be yours}.
Serve fish immediately, topping with a generous helping of salsa. Garnish with additional cilantro, if desired. YUM!
