Can You Go Wrong When You Wrap It In Bacon? {Bacon Wrapped Potato Bites}

Have you ever checked out the blog The Kitchn?  I haven't totally figured it out.... is it just Faith?  Is there a team?  I'm not sure but I've been subscribed since long before I ever thought about being a blogger and I really love it for great ideas.....
This recipe was touted by them as a party appetizer, and I can certainly see it that way;  AND I used for my Easter brunch;  BUT I fully intend to make these this weekend to go with eggs for my family's breakfast.  They were YUM & fairly easy {always expect a little bit of time whenever you are wrapping food around food}.
So, adapted from The Kitchn's Bacon-Wrapped Potato Bites check these out....
NOTES: 
  • Makes about three dozen bites {I'm doing half this recipe for family breakfast and I doubled this for my Brunch}
  • For my brunch, we prepared these all the way except baking; wrapped the tray tightly with Saran wrap and put in fridge until morning when I baked.

WHAT YOU NEED:

1 pound small or medium red potatoes
1 1/2 teaspoons salt
1  teaspoons dried rosemary
1 tablespoon olive oil
1 pound thick-cut bacon
WHAT YOU DO:
Preheat the oven to 400°F.
Wash the potatoes. Chop them into 1-inch chunks roughly the same size then bring to a boil in salted water, cook the potatoes for 3 to 4 minutes maintaining a boil, until fork tender but NOT mushy.
Drain the potatoes and put them in a large bowl. Add the rosemary, olive oil, and toss until the potatoes are evenly coated.
Cut the strips of bacon into thirds. Wrap each potato bite in a piece of bacon, securing it with a toothpick {I own metal skewers}. Put the potatoes on a baking sheet lined with parchment paper or aluminum foil. I packed them in pretty close but not quite touching.
Cook the potatoes for 35-40 minutes, without turning until the bacon is cooked through and as crisp as you like it.
