I'm a Salty Girl {Salted Roasted Chickpeas}

Salted Roasted Chickpeas
I decided to make some snacks this weekend to head into the week with so I made some of my Trail Mix Cookies YUM.  But need something salty too.  I had seen Roasted Chickpeas on The Lean Green Bean and decided that was exactly what I needed.... a crunchy, salty, protein filled treat! 

These Chickpeas are super easy and soooo yummy. I went very simple and simply salted but if you check hers out she did a sweet & spicy version or you could do any spice you wanted [when I was googling for the recipe I even saw a recipe out there for cinnamon and sugar ones!].

WHAT YOU NEED:
2 cans chickpeas [garbanzo beans], drained and well rinsed
2 tsp olive oil [I used my garlic infused oil]
2 tsp kosher salt




WHAT YOU DO:
1. Empty the can of beans into a colander & rinse well.
2. Then pour well rinsed beans onto large jelly roll sheet and blot dry with paper towels; roll them around so you blot as much water as possible, then pick out any "skins" that have loosened during this process.
2. Drizzle the oil and stir well to coat.
3. Sprinkle with the salt.
4. Spread on a baking sheet (with edges) trying to keep them relatively close to each other, I found strays burnt.
5.  Cover loosely with foil and bake at 400F degrees for 20 minutes, remove foil and bake an additional 20 minutes.

  1. I've got to try these. I saw a tv chef make something similar, making spicy chickpeas with paprika and cumin, and they looked really good. How do you store these, assuming they're not eaten all at once? :)
