I love this time of year and all the fresh berries! And I think Berry Salsa & Fish are made for each other..... and this recipe is a great weeknight meal, less than 40 minutes from start to table....
WHAT YOU NEED:
for the Salsa:
2 cups fresh raspberries
1/4 cup chopped sweet onion
3 teaspoons finely chopped green chile
1 clove minced garlic
1/4 cup chopped fresh cilantro
1/2 teaspoon evaporated

cane juice {or sugar}
3 tablespoons lime juice

WHAT YOU NEED:
For the fish:
4 tilapia fillets
4 tilapia fillets
1/4 cup olive oil
1/4 cup raspberry vinegar
1/4 cup honey
WHAT YOU DO:
1/4 cup raspberry vinegar

WHAT YOU DO:
- Preheat oven to 350 degrees F
- Cover your Jelly Roll Pan with parchment
- In a mixing bowl, whisk together the olive oil, raspberry vinegar, honey, and dill weed.
- Arrange the tilapia filets in a single layer in the prepared pan
- Pour mixture over the fish filets, coating the filets evenly
- Bake in a preheated oven, uncovered for 20 minutes or until fish is flaky with a fork.
- As plating cover with the Salsa
I 'berry' much like this salsa - actually adore it would be more apt ;)

DeleteOooo yum! I've never thought to do berries with tilapia, this looks so pretty! I think the only tilapia I"ve ever made is shoving it into some fish tacos :) Must try this! It sounds sooo yummy! And looks gorgeous for spring!
