No big long story, just good food. This is one of those recipes that you keep in your hat and you can look amazing with really no effort. VERY EASY....
WHAT YOU NEED:
1.5 lbs. big shrimp 21 count or so.... peeled & deveined but mine were tail on still
1 red onion, quartered & broken up [or 1 red or yellow pepper cut in large pieces]
2 TBSP olive oil
2 tsp paprika
1 TBSP minced garlic
1 tsp dried oregano
1 tsp kosher salt
WHAT YOU DO:
preheat oven to 400;
mix all ingredients well;
line a jellyroll pan with
parchment and pour it all on; spread out so one layer;
bake 17-20 minutes.
VOILA!
I served over brown rice with asparagus. YUM.
