Ham & Cheese Breakfast Muffins |
Boy was this weekend BUSY getting the family ready for me to be out of town during standardized testing.... I still wanted them to have hot, healthy breakfasts without me there so I made breakfast burritos and these awesome popovers. All easily nuked and taken on the go.... They are a hit!
Ham and Cheese Breakfast Muffins
WHAT YOU NEED:3 cups all-purpose flour
1 TBSP baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1 & 1/3 cups buttermilk well shaken
2 TBSP vegetable oil
3 TBSP butter, melted
1 cup diced ham
1 & 1/2 cup grated cheddar cheese
WHAT YOU DO:
Heat the oven to 400°F.
Spray your muffin pan with cooking spray or line it with muffin cups. I used popover pan without liners and it made 21 popover size, I imagine about 18 regular muffins or 36 mini-muffins out of this recipe. These are quite hearty muffins so going smaller might be better, the popover was a really nice size.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. I then just added all the rest of the ingredients except the ham and cheese and mixed well. Then stir in the ham & cheese.

That's it. Just fill your muffin cups a little more than half way. Bake until tops are lightly browned, approximately 22-25 minutes for muffin or popover, cut down to 12-15 minutes for mini-muffins.
