A Quick Sweet Treat (Paleo Macaroons)

David has a huge sweet tooth and that is a major challenge when you are trying to eat Paleo. I found this recipe online and it is a great one, I wish I could credit it but I snapped a picture of the screen and couldn't find it again. Anyhow, you'll have that occasionally and these are too good to keep to myself.

These are a quick prep treat and the "batter" holds up well in the fridge if you want to make a few here and there as a fresh baked treat.

What you need:
2 large egg whites
1/4 cup honey
2 & 1/2 cups unsweetened coconut (I had to go to my health food store to find)
A pinch of sea salt

What you do:
Whisk the egg whites and honey together then stir in sea-salt and coconut. Put bowl in fridge for 30 minutes.

Preheat oven to 350 and form "dough" into golf ball size balls and place on parchment lined jelly roll pan.

Bake for 10-15 minutes until golden brown. ENJOY!

Slow Down And Smell The Cookies {Mrs. Field's Chocolate Chip Cookies.... sorta}

When it all seems CRAPPY and not only crappy but SWIRLING CRAPPY, it's good to have a ten year old say "Let's Make Cookies."  It's even better when you have the sense to stop yourself from saying.... "I really need to __________" Insert any verb.... wash dishes, work, fold laundry, pay bills and instead say....  "YES, LET'S!"

And so, we prepared... I saw a recipe for Mrs. Field's on YUM SUGAR that I imagined would be superior and it was, I've noted my differences which were purely out of necessity.  12 thumbs up from the Webb House!

WHAT YOU NEED:

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup C & H dark brown sugar (firmly packed) {I only had a 1/2 cup dark so I did 1/2 light & 1/2 dark}
1/2 cup white sugar
1 cup cold salted butter, cut into cubes {I only had unsalted so I added a 1/2 tsp salt}
2 large eggs
2 teaspoons pure vanilla extract
2 cups (12 oz.) semisweet chocolate chips {I used a 2 cup combo of large chips, white chips, dark chips and mini morsels.... it's what I had as my kids are always into my morsels :)}

WHAT YOU DO:
  • Preheat oven to 300° F.
  • In a medium bowl combine flour, baking soda, and salt. Mix well with a wire whisk.
  • In a large bowl, with an electric mixer blend the sugars at medium speed.
  • Add the cold butter and mix to form a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla extract and mix at low to medium speed just until blended. Do not over mix.
  • Add the flour mix and chocolate chips and blend at a low speed just until mixed.
  • Drop by rounded tablespoons onto an ungreased cookie sheet, two inches apart.
  • Bake 20-22 minutes until golden. Transfer cookies immediately to a cool surface with a spatula. You can line sheets with parchment and transfer to a cold surface to do it faster.

 
Makes 30-36 cookies, depending on the size of your scoops.... we did some BIG SCOOPS because it was Tuesday and up until that GIANT cookie my week was NO FUN!

I know I'm definitely more DINNER oriented this week.... possibly because it's been kinda crazy & I've made a bunch of quick "clean out my fridge" meals so I'm coveting this yummy food.... Lauren at Part Time Housewife {canNOT imagine what she'd cook up if she was FULLtime!} grilled up some Grilled Black & Bleu NY Strips.... YUM.  They looked awesome.... and now I'm just waiting for the recipe for the Bacon Slaw also in this picture.... give it up LAUREN!!!

As usual I have a couple housekeeping matters :)

You may recall that 2 weeks ago I was over at Wilde In The Kitchen participating in her bake sale to raise money for Relay for Life!  WELL, not only did I get to send MY cookies of to my lucky winner {XXOO MOLLY} but I also received {and you know it really is better to RECEIVE than to GIVE ....is she kidding? you'll never know} but OMGoodness did I receive some YUMMINESS!
I'm still bitter at some chick Marisa who outbid me all over the place but boy did SHE miss out.... I received some Chocolate Chip Snickerdoodles from Heather at Bake, Run, Live that my family fought over AND an out of this world loaf of Povitica Bread from Mrs. Wilde herself, Vicki.  SO YUM.  It was such an awesome cause & such an awesome treat to receive my goodies... hope you'll all join in next time!

SWEETS FOR THE SWEET! {Relay for Life Bake Sale}

FUN STUFF on this Thursday.... 
and for a GREAT cause!
A fellow blogger, Wilde in the Kitchen, is participating in the Relay for Life and as her fundraiser she is holding a blogger bake sale!


HERE'S THE SCOOP:
"It's time for the WITK Bake Sale for Relay for Life!  All I can say is thank you to the bloggers and friends that have come together to deliver an amazing bunch of treats.  If you are looking for more information about the cause, check out this post of mine from a few weeks ago!
Be sure to check where the bakers are shipping to!  There are even a treat or two for my friends in the UK & Canada!
Here are the details...  The bake sale will run through Friday at 11:00pm eastern standard time. Each item has a starting bid of $15 and can be bid up in $1 increments.  All bids should be e-mailed towildeinthekitchen@hotmail.com, no bids left in the comments section will be counted. Be sure to include your bid as well as which item you are bidding on!
Bids will be updated through the course of the day as I recieve new bids.
Winners will be e-mailed on Saturday, May 19 and will be directed to the Relay for Life Website to post their donation/bake sale purchase.
Bakers will then make & ship their delicious treats and mail them to the winners within 7 days!"

I found this great little Blog called Butter vs. Burpees.... those of you who know me from my Crossfitting days know that I had to go look and see if I could sign up to cheer on the Butter.... but instead I found this most incredibly yummy recipe for PALEO {nooooooooooooo} cookies.  I tweaked ever so slightly but want to be sure I nod to the originator.... go check out her blog there's this and more, but in meanwhile try these, 20 minutes start to your first bite of heaven...

Featured Five

It's that time of the week!  That's right....

Tina at The Flour Trader really caught my eye with an Austrian Springtime favorite.... Berry Meringue Slices.  Love Sweet & Tart!

Heather  at the Sweet & Savory Tooth hit the mark with the maple and cornbread combo.... remember my Madagascar Corn Bread?  Well, here's another keeper for sure! Maple Cornbread, YUM!



Crystal from Mrs. Happy Homemaker speaks the language of love..... Bacon Stuffed Waffles??? Shut. The. Front. Door.

I really thought this post from Lindsay at The Lean Green Bean was awesome and not for any particular recipe {although all look awesome} but more conceptually.... we all run out of ideas and I so love someone sharing their "day in the life" ideas to add some ammo to the arsenal! Who says all chips in cookies need to be chocolate? {Potato Chip Cookie Recipe}


A few weeks back one of my favorite food bloggers posted a recipe for Potato Chip Cookies and it drew me right in..... I'm really not much of a potato chip eater but when I read the recipe I knew I had to save it to try.  I was totally that kid they talked about in the blog that put chips on their sandwiches.... for me it was bologna or "chicken roll" on white with chips.  L-O-V-E.

Not to digress too much but if you remember "chicken roll" I'd love you to comment.... I loved that "crap" {and I think that's a literal use} but I think it was banned by the FDA in the 80s sometime but it was my absolute favorite and somehow NO ONE remembers it.  BOO :(

Anyhow, back to cookies.  I had to try and they were so perfect, I HAD to share.

{I've only made a few tweaks }

Cookie
1 cup (2 sticks) unsalted butter, at room temperature 

            {I had SALTED butter for some strange reason so I skipped the salt below}
1 cup granulated sugar, divided
1 teaspoon pure vanilla extract 

            {I used Madagascar of course}
1/4 teaspoon table salt 

            {I skipped, see above}
1/2 cup Candied Almonds WHICH ARE REALLY PERFECT IN THESE COOKIES

            {original recipe called for roasted pecan but this is what I had on hand}
1/2 cup finely crushed potato chips 

            {I used good old Clancy's and let them crush in the mixer}
2 cups all-purpose flour

Potato chip salt finish {I did this only on first half... it's a bit much UNLESS you dip}
1 tablespoon crushed potato chips {these I crushed}
1 1/2 teaspoons flaked sea salt

Chocolate dip finish {I did this to half, really yummy in combo w/ the seasalt finish}
4 ounces semi- or bittersweet chocolate, finely chopped

             {I used Milk Chocolate chip cause that's what I had on hand}
1 teaspoon butter, canola oil or vegetable shortening

Preheat your oven to 350 degrees F. 

Line your baking sheet with parchment paper {I had waxed and used it with good results} and set aside. I used my Kitchen Aid with regular beater and creamed together the butter with 1/2 cup of the sugar until lightly and fluffy, then mixed in the vanilla until smooth. Add the pecans, 1/2 cup potato chips and flour together and mixed until a huge bowl of crumbly looking dough; it was moist though.

Place the remaining 1/2 cup sugar in a small bowl. Scoop a tablespoon-sized mound of dough and form it into a small ball with the palms of your hands. Roll the ball in the remaining sugar until coated. Place on prepared baking sheet and using the bottom of a drinking glass or measuring cup to slightly flatten the cookies. Cookies only need to be an inch apart; they only spread a little. Sprinkle with a few flakes of the potato chip salt. 
Ready to go!



Bake cookies until lightly golden at the edges, about 15 minutes. Transfer to cool on a wire rack.

If dipping in chocolate, melt chocolate with butter, oil or shortening in a double boiler or in short bursts in the microwave {I do it this way-- 30 seconds, stir, repeat}. Stir until smooth. Dip half of each fully cooled cookie in the chocolate, and let dry and harden on a wire rack.
