Happy National MOJITO Day! {A Collection of Mojito Recipes}

Lemon-Lime Mojito
Well, it's been a sad three months with the inability to find the time or motivation to do a post.... I've got a gazillion pictures of dinners, restaurants and drinks all waiting for me to reactivate and write a post or two.  Alas, I've not been able to do it. Busy with life and a few health issues have translated into a million excuses and no blogging.

BUT NOT TODAY.

EVERYTHING can wait while I gather my Mojitos together and raise my figurative glass to celebrate my favorite-ist thing..... THE MOJITO!
and I will raise a literal glass later :)

Best. Darn. Mojito. {Happy Thirsty Thursday}

Blackberry Mojito
Last weekend some blackberries caught my eye and I bought them thinking I was going to try a Bramble.

That's how it all starts.

Well, I apparently saw something shiney and next thing you know my Bramble became a Mojito. And then my new Mojito became an inadvertent Denizen shout out.

You may recall when I did my Denizen review {and the Rum Collins post} I mentioned that I thought Denizen would be a fab Rum for a Mojito.  Well, I was right.  I really think this Rum and its fruity essence was a key component to what I will simply call....

Blackberry Mojito
The best darn Mojito.

What You Need:
1 oz. simple syrup
4-5 blackberries
Handful of mint
2 oz. white Rum (I used Denizen)
3 oz. club soda

Yup. No lime.

What You Do:
Muddle your blackberries,
simple syrup and mint.
Add rum.
Pack with ice,
top with club soda
and sit back
and ENJOY!

Thirsty Thursday & a Rum Collins

RUM COLLINS
I cannot tell you how excited I was when Denizen contacted me and asked if I'd like to try their Rum.... like really?  Me?  Little old Grasshopper?

Yup. They had seen my Rum Compilation and decided I was worth a bottle.... how right they are :)

So, once it arrived I sat with it displayed at the dinner table for a week.... the children shook their heads at me as they often do, the adults passed it around smelling it and eventually sipping.... it was a nice Rum.  Phew, it was nice [I was so worried it would suck]. It was VERY tropical smelling but not as intense as a Malibu.  Just an essence of tropical fruit.  I finally decided I would try a Collins with it for Thirsty Thursday.  Nothing too complex but a little tart to go with the sweet.  It was VERY nice.  I actually think this will be FABULOUS Mojito Rum.... and I'll report back on that!

TRY THIS IN THE MEANWHILE...

what you need:
2 oz. White Rum [I really enjoyed the Denizen]
1 1/2 oz. simple syrup
2 oz. club soda
ice

what you do:
mix the Rum, lemon juice & simple syrup together and then pack your class with ice.  Top with club soda and garnish with lemon. AHHH.  Cheers!

THIRSTY THURSDAY & a Fabulous bottle of Meyer Lemon Soda {Meyer 25 Cocktail}

T.G.I.T.T.

Another week has whipped by but I did take a moment to  pick some basil, do a little muddling and come up with an absolutely fabulous drink for Thirsty Thursday :)

I think it's a great end of summer treat: it's refreshing, it's crisp, it's Yummy.  I found this awesome Meyer Lemon soda at World Market, I'm sure you could find something similar at Trader Joe's or Whole Foods.

I mixed mine with Zacapa Rum because I've grown very accustomed to that oakey, dark amber rum taste but I'm sure this would be absolutely fabulous with Captain Morgan or Bacardi.

What you need:
1 & 1/2 ounces Amber Rum
1 thick slice lemon
seven or eight torn fresh basil leaves
3 ounces Meyer Lemon soda
3 ounces club soda
lots of ice.

What you do:

  • Put your lemon slice and your torn basil leaves in the bottom of your favorite class: muddle well.
  • Pack glass with ice then fill halfway with your lemon soda and halfway with club soda.
  • Top with your favorite Rum.

Stir well & enjoy.

NOTE: I used club soda in addition to the Meyer lemon because I like a crisp/less sweet cocktail.  In many ways this is sort of a modified Mojito in that I substituted the lemon soda for the simple syrup... if you like a sweeter drink you could skip the club soda.

p.s. excuse my crappy iPhone photography!!!

Dark & Stormy.... started as my mood, evolved into my drink and now it's the weather I will sleep peacefully to

Dark & Stormy Cocktail
 Only two very long days in this week so far but OMG, they were rough.  I was feelin' a bit grrrrrrr and when I stopped at World Market on my way home {love that place} I saw Ginger Beer and thought immediately.... DARK. AND. STORMY.

I've seen a lot of recipes over the years with far fancier rums but I tend to have Myer's Dark on hand and so my quick Tuesday, long days, short week Dark & Stormy is this....

WHAT YOU NEED:
3 oz. Myers Dark Rum
8 oz of Ginger Beer
1 oz. fresh lime juice {squeeze a half of a lime}
LOTS of ice

WHAT YOU DO:
Pack your favorite glass with ice.... a pilsner would work, or large wine glass, I have some tall wide glasses from C&B that I love for my ice packed drinks.

Squeeze you lime over the ice,
fill with Ginger Beer and top with Rum.
Stir well, sip and see the storminess evaporate.

Bring it on Wednesday, oh yeah it's a holiday ;)

What's for dinner Mom? {Key Lime Mojito Recipe}

MEET OUR DINNER.....

MEET MY DRINK

HELLO KEY LIME MOJITO
I think you know the recipe for my dinner.....
here's how you make the drink

2 parts Rum {I had Bacardi}
1 part simple syrup*
1 part Key Lime Juice
8 mint leaves
1 key lime sliced

fill appropriate glass with ice
top with club soda and....

AHHHHH, who cares that dinner is frozen!

*simple syrup can be bought at most grocery and/or liquor stores or you can make it by combining equal parts water & sugar and bringing to a boil and then removing immediately from heat and cooling.  I usually do 1 cup water to 1 cup sugar and store in an airtight glass jar in the fridge {it lasts a while}
