Pizza Night {Homemade Whole Wheat Pizza Dough & Super Easy Homemade Sauce too}

David has been DYING for pizza ever since we started the "you can eat anything you want BUT not THAT" Diet.... so decided we'd make homemade pizza today and although Publix sells "wheat" dough I have to assume it's like most wheat bread.... it has an element of wheat but still has white flour and sugar in it.


So, to stay true to the evil diet I searched the web for recipes, and ended up having to piece them together because I found one that I liked most of the ingredients and then saw it was for a bread machine and found all the way instructions but then had to look up parts because it assumed I knew too much.  I will say this, I honestly don't know how you could do this without a mixer or processor, it took a good 5 minutes or more for my Kitchen-aid.


All said, I came up with a pretty awesome recipe that had no evil flour or evil sugar and that everyone really liked a lot!  I mean don't get me wrong it wasn't Jersey pizza.... but it satisfied the need for now.




FOR THE DOUGH:
HERE'S WHAT YOU NEED
1 cup lukewarm water [I used my insta-read thermometer and had it at 100F]
3 cups whole wheat flour
3 tbsp. honey
1 tsp. kosher salt
2 tbsp. olive oil plus extra for spreading on dough
2 tsp. yeast
2 tsp. cornmeal


HERE'S WHAT YOU DO:
Proof yeast in a measuring cup with lukewarm water. Click here for an explanation from The Kitchn on "proofing" that I found useful.
In a mixer with a bread hook or food processor add ingredients; combine well. Then process until the dough forms a ball on the blade/hook.   Took over five minutes.  While it's processing coat a large bowl with olive oil.  Remove dough to oiled bowl, cover with a kitchen towel and let rise in a warm place for 45 minutes or until dough has doubled in bulk.
Punch down dough and transfer to a floured board and knead briefly. Divide dough into 4 equal portions and roll each piece into a ball. Place the balls of dough, covered with saran, in the refrigerator for at least 2 hours or overnight. 


WHEN YOU ARE READY TO MAKE PIZZA:
take out of the bowl to
bring to room temp
Get dough out of fridge & bring to room temperature before proceeding.  While waiting, make your sauce [see below].
Once room temp, turn oven on to preheat  to 450 degrees F and roll and stretch each piece of dough into a 7 to 8-inch circle or whatever shape you want :) Place each crust on a pizza stone or parchment covered pan.

Cover with sauce and add desired toppings.... I did Ricotta, onion, mushrooms and mozzarella for me, for David Mushrooms, pepperoni & Mozzarella, Dad got everything and the kids just cheese.... 




Bake 7 to 8 minutes per pizza.
SO. GOOD.
Because we put our toppings UNDER the cheese we
"marked" them with a piece or two.... it was very smart :)
 FOR THE SAUCE:
WHAT YOU NEED:
1 & 1/2 cup POMI tomato paste
1/2 cup water
3 TBSP tomato paste
3 Tbsp.  graulated garlic
1 Tbsp. agave surup 
1 tsp. onion powder
1 tsp oregano
1 tsp basil
1 tsp dried parsley

WHAT YOU DO:
Mix all ingredients together and allow to marry covered until you need.
