I adore berries! {Raspberry Tilapia with Raspberry Salsa}



I love this time of year and all the fresh berries!  And I think Berry Salsa & Fish are made for each other..... and this recipe is a great weeknight meal, less than 40 minutes from start to table....




WHAT YOU NEED:
for the Salsa:
2 cups fresh raspberries
1/4 cup chopped sweet onion
3 teaspoons finely chopped green chile
1 clove minced garlic
1/4 cup chopped fresh cilantro
1/2 teaspoon evaporated 
cane juice {or sugar}
3 tablespoons lime juice 

Mix all ingredients and allow to "marry" for a t least 30 minutes while you make your fish.

WHAT YOU NEED:
For the fish:
4 tilapia fillets 

1/4 cup olive oil
1/4 cup raspberry vinegar
1/4 cup honey

WHAT YOU DO:

  • Preheat oven to 350 degrees F 
  • Cover your Jelly Roll Pan with parchment
  • In a mixing bowl, whisk together the olive oil, raspberry vinegar, honey, and dill weed. 
  • Arrange the tilapia filets in a single layer in the prepared pan
  • Pour mixture over the fish filets, coating the filets evenly
  • Bake in a preheated oven, uncovered for 20 minutes or until fish is flaky with a fork. 
  • As plating cover with the Salsa 
ENJOY!

    1. the strawberry citrus is FAB, I actually like the Tilapa prep in that one better too, although this way might be ever so slightly healthier [sigh]

  3. I must have been in a cave the last few decades - I've never done berries with fish. This looks so amazing - so light - so spring - so - must bring this to my home soon.

  5. Oooo yum! I've never thought to do berries with tilapia, this looks so pretty! I think the only tilapia I"ve ever made is shoving it into some fish tacos :) Must try this! It sounds sooo yummy! And looks gorgeous for spring!

    1. Fish Tacos are one of my favorite foods in the world.... oddly enough I only eat them OUT though.... perhaps I should revisit that!
