Go Green {A Whole Lot of Green Veggies Saute}

It was 90 degrees in Florida today!  HELLO Summer... and I swear the first day of Spring was only a couple weeks ago!


Summer makes me want to grill, so I thought I'd ruin my first steaks of the year... it's a goal this summer for me to master the Art of grilling a medium steak.  I'm never quite right...

But where there is weakness there is strength.  My veggies are always spot on, tonight was no exception.  This was a great little "throw together"  


WHAT YOU NEED:
1 Zucchini sliced
10 stalks asparagus, hard ends trimmed and discarded then cut in 3-4 pieces
2 bok choy stalks, sliced up until the leaves start
1 bag of baby spinach
2 tsp granulated garlic
2 tsp grape-seed oil {or olive or sesame}
a pinch of kosher salt
1/4 cup shredded Parmesan~Romano cheese


WHAT YOU DO:
While your steaks cook {I will not advise on that... yet :)} chop all your veggies.  Once your steaks are "resting" heat your oil over medium high heat in a wok or large saute pan.  Add everything but the spinach and Parmesan and cook stirring frequently for 5 minutes or so, veggies should be done but with a light crunch.  Add Spinach and saute for 1 minute before adding the cheese.... serve immediately.... I recommend a lovely glass of Pinot.
