Eating in Shifts {Chicken & Cannellini Chili Recipe}

Chicken & Cannellini Chili


Tuesday nights have turned into our "eating in shifts night" and there's no way to possibly gather everyone... unless we ate at 9 o'clock... and I'll be watching The Voice by then, just sayin'


So, I have a handful of yummy go-to recipes for these occasions and many of them are Chili.  Who doesn't love Chili after all?  And this one happens to be... wait for it.... yup, healthy.







HERE'S WHAT YOU NEED:
1 medium sweet onion chopped finely
equivalent of 1 chopped Roasted Red Pepper ...about 1/2 cup {I like Mezzetta but any brand will do}
2 lbs. ground chicken
2 TBSP minced garlic
1 TBSP plus 1 tsp Chili Powder {this makes it pretty mild}
2 tsp cumin
1 heaping tsp oregano
1 bay leaf
1 26 oz. box Pomi chopped tomatoes {approx 3 1/2 cups}
2 cans Cannellini beans drained


HERE'S WHAT YOU DO:
Sweat the onion in the pan over medium heat until it "wilts" {about 3 minutes} before adding the peppers and chicken.  Brown chicken, breaking up the big pieces, over medium heat until no longer pink, approximately 8 minutes.  Mix in all spices well and then add the Pomi and Beans.  Turn heat to high and bring to a boil, stirring constantly, then immediately reduce heat to low, cover and simmer for 1 hour.


Depending on the length of time between shifts you can leave on low or turn off, cover and reheat.... or throw it in a crock pot and fuhgettaboutit :)
