Getting Crocked {Spicy Chicken & Chorizo Stew}

Spicy Chicken & Chorizo Stew


Cooks Illustrated Make-Ahead Recipes 2012 is definitely a magazine worth buying.... I saved no less than 10 recipes from it that sounded to die for.  This was the first one I made and it was fabulous... I made a few changes based on my unwillingness to touch a pan if I'm crocking [as well as my tastes and what I had on hand] but this is a recipe I will make again and again, it was so worth it.





WHAT YOU NEED:
1 large onion chopped
8 garlic cloves minced
1 tsp kosher salt
1 tsp ground pepper
4 lbs boneless skinless chicken thighs, trimmed of huge fat pieces
2 cups low sodium chicken broth
1 48 oz. box POMI chopped tomatoes
12 ounces chorizo sausage, squeezed from its casing and broken up
1/4 cup minute tapioca
1 small can diced green chilies
2 TBSP brown sugar
2 cups frozen corn {thawed} Note: I used a whole small bag
1 15 ounce can of black beans {rinsed well}

WHAT YOU DO:
I simply put everything on the list EXCEPT the corn and beans in my large crock pot, in layers.  I did not stir. I covered and refrigerated over night and then turned on low in the morning, set for 10 hours.  Before I left for work I put the bag of frozen corn in the refrigerator on a plate to thaw. When I got home at 5:30 the crockpot had been on for 9.5 hours, I added the rinsed beans and thawed corn, stirred well and left on for another half hour before serving.

I served with cornbread.... I cheated and picked up at Winn Dixie BUT if you are feeling less lazy try this Corn Bread Recipe!
