I'm All About Cute Food {tortellini kabob recipe}

Tortellini Kabob Appetizer
I know I've been largely MIA.... as penance thought I'd try to throw out a couple festive EASY make ahead appetizers each week as the holidays stroll up and get us.  These are so good and truly best if they are made the day before but not required.

This recipe will make about 80 kabobs.... cut it down as you need, but they keep as a yummy snack for a few days in fridge so don't skimp too much :)


Tortellini Kabobs

WHAT YOU NEED:
1 package of tortellini [I used the mixed spinach and white so I'd have even more color]
1 quart cherry or grape tomatoes [halved]
3 yellow or orange peppers [cleaned & cut into small squares]
1/2 cup of your favorite Italian Dressing or Vinaigrette
80 6-inch bamboo sticks

Cook your tortellini as per package instructions to al dente, drain and set aside to cool while you cut your vegetables.

Once prepped start kabob-ing.... tomato "cap up" then green tortellini, then pepper, then white tortellini and finish with a tomato "cap down" line up in a Tupperware or glass 9x13 dish drizzling lightly the dressing on each layer before piling the next on top.  No need to separate these, I've had no sticking issues.  Cover tightly and refrigerate until ready to use.

They are bright, festive and no fuss appetizer or light luncheon item.  Enjoy!

Sometimes You NEED a cheat.... {Magical Pomi Salsa}

POMI SALSA
 No time?
This Salsa is THE best cheat ever....
less than 10 minutes prep and then IF you have time refrigerate to let it marry....
if not, seriously I would eat these ingredients out out the Pomi box.

WHAT YOU NEED:
1 box Pomi chopped
1/2 red onion chopped finely
3 tbsp fresh cilantro {chopped}
1 TBSP minced garlic
1 TBSP lime juice
2 tsp cumin
1 tsp kosher salt
2 TBSP canned diced green chilis

WHAT YOU DO:
Do the hokey pokey and mix it all around....

The WOW Factor {Parmesan Cauliflower Recipe}

I have a house divided when it comes to cauliflower.  The girls love it and the guys not-so-much.  At least that's what THEY thought!  Until I made Clinton's Magical Cauliflower one day..... Even the Old Guy who never let Ruthie cook Cauliflower because he hated it said, "WOW, now that could change a guy's mind about Cauliflower."

HERE'S ALL YOU NEED:
1 head of cauliflower
2 eggs beaten with 2 TBSP water
1 5 oz bag of shredded Parmesan & Romano
1 & 1/2 tsp Paprika
a sprinkle of kosher salt

Preheat your oven to 325 & line a large jelly roll sheet with foil; lightly spray with olive oil {real or "Pam"}.   trim off leaves and stem of cauliflower then slice down middle.  Take each half and half again, then cut each "quarter" into slices about 2.5 inches thick.  Some florets will break away, that's fine we will use them ALL :)
Beat your eggs and water in a bowl and mix together the cheese and paprika in another.  Dredge each piece of Cauliflower in first the egg then the cheese and line up on your prepared pan.  lightly sprinkle some Kosher salt over all when done.


THAT'S IT!  In the oven for 40 minutes..... they'll be fighting over it {and it's good for them}..... HA!
