Always Buy Weird Things.... You Just Never Know [Paleo Chayote and Beef Soup]

During last week's grocery shopping trip I saw these little squash called Chayote.... they were 2 for $1.49 so I decided to grab a couple.  I love doing that.  I then come home and google to find out what I have.  It's a fun little surprise! So, at Specialty Produce online found a bunch of nifty info about the Chayote and some links including one to Eating Out Loud which had a non-Paleo yummy looking soup..... I edited as necessary and came up with a most yummy Paleo Chayote and Beef soup.

What you need:
1 tablespoons olive oil
2 lb. cubed beef
2 medium tomatoes quartered

2 chayote, large dice - skin on
1 small onion, chopped
3-4 Baby Bella mushrooms, chopped
1/2 sweet potato, peeled and cubed
handful of baby carrots chopped
handful of spinach, de-stemmed
8 cups chicken stock
2 bay leaf
1/2 tsp. smoked paprika
1 tablespoon flour
1/2 tsp. ground pepper
 
Paleo Chayote & Beef Soup
 
What You Do:
Heat a large pot over medium heat and add oil.  
Sprinkle beef with ground black pepper. 
Place into pot and brown on all sides. 
While meat is cooking, add bay leaf and the whole tomatoes. 
Once meat browned, approximately 5 minutes
add everything else. 
Bring to a boil then reduce to a simmer
and cook at least 1 hour until veggies tender.
